Thanks to “dry-aging” displays where temperature, humidity and ventilation are controlled, fresh meat acquires flavours, aromas and softness becoming in this way an exclusive and very high quality product.
From the GEMM experience a new line of BRERA displays dedicated to meat maturation is born. It has compact sizes and elegant design to be used for the dry-aging traditional process. Low temperature, high humidity and perfect ventilation are the essential conditions for the safely controlled maturation method, due to which, desiccation and bacterial contamination are avoided.
